Although atherosclerosis is one of the main health problems in industrial countries, it is rare in cultures that base their nutrition primarily on grains, legumes, lentils, vegetables, and fruits.

When you eat fatty foods, especially foods rich in animal fat, the saturated fat and cholesterol in these foods wind up in your blood and stick to your arteries.

Vitamin C is required to repair damaged arteries so that the body does not try to patch arteries with atherosclerosis.
